Yoshi Goma Tōfu
Ingredients
100 gram Atari Goma (Sesame Paste)
1,000 ml Plain Fresh Milk
200 ml Fresh Cream
120 ml Corn Starch
Yoshi Goma Tofu with Uni and Ikura SoePreparation for plating
100 gram Yoshi Goma Tofu basic
10 gram Wakame Seaweed
15 gram Uni (Fresh Sea Urchin)
5 gram Ikura (Salmon Roe salted)
5 gram Horenso (boiled spinach)
2 gram Wasabi paste
2 gram Edamame (Boiled soybeans)
2 gram Ubi chips
15 ml Shoyu Koikuchi (Soy Sauce)
Cooking Method for Yoshi Goma Tofu basic:
1. Mix all the ingredients
2. Preheat the pan with low heat
3. Cook over low heat, stirring often, until it thickens into a pudding-like texture. This may take about 20 minutes.
4. Once it turns to the expected texture, pour the mixture into a container and smooth out the top and let set in the fridge or chiller for minimal 1 hour.5. Ready to be plated with additional ingredients.
